It's Rosh Hashanah season and I'm sure many of you already started the cooking and baking process. There's so many ways to celebrate through the food that we eat. This how to: apple challah rolls, came to me as I was preparing my challah last year. On this chag, we have the simanim that are meant to be symbolic of a good and sweet year ahead. Some like to weave the classic ones through the meal, while others start off with a little tasting of each siman before proceeding with a holiday meal. Others, do both!
Apples are one of those simanim and are so versatile in both sweet and savory dishes. I love how these apple challahs are simple to make, and add such a special touch to the holiday table. Especially for the little ones!
What ingredients do you need for apple challah rolls?
- Challah dough (recipe of your choice or store bought)
- Egg for brushing the dough
- Pretzel sticks
- Pepitas aka pumpkin seeds
How to: Apple challah rolls
Preheat oven to 350 F. Divide up the dough into even sized pieces. I really love using a food scale for this (it's the OCD in me) but of course you can eyeball it. Mine weighed 80 grams ea. which is just under 3 oz. Roll each piece into a ball that will fit inside of a muffin tin. Grease a muffin tin and place your dough balls inside. Brush with egg and stick in a pretzel in the middle of the roll and a pumpkin seed slightly to the side so that it looks like an apple leaf. Bake until golden!
Storing:
For peak freshness, store in the freezer until close to serving time. Defrost at room temperature and enjoy!

- 2 ¼ lb challah dough
- 12 pretzel sticks
- 12 pumpkin seeds
- 1 large egg beaten
Instructions
