I'm sure you've seen Georgian Cheese Bread, also known as Khachapuri, around town. I was hesitant to make it. Finally, I bit the bullet and tried it for a comfort food article I was working on. Cheese and bread definitely fit the comfort food criteria. Spoiler alert, it was both easy to make and surprisingly crazy delicious. SOLD! So trust me on this one. I'm going to teach you how to make Georgian cheese bread with pizza dough, and I'm confident you will love it too.
Ingredients
- Pizza dough- Use your favorite store bought pizza dough. The hardest part is remembering to take it out of the freezer.
- Ricotta cheese
- Shredded mozzarella cheese
- Feta cheese
- Black pepper
- Egg yolk- This adds so much creaminess, but if it's not your style, simply skip it.
- Butter
- Fresh parsley for garnish, optional.
How to make Georgian Cheese Bread with Pizza Dough:
- Preheat oven to 450°F. In a bowl, combine the three cheeses. Season with a few grinds of pepper.
- On a lightly floured piece of parchment, roll dough into an oval ⅛-inch thin.
- Top with three-quarters (3.5 cups) of the cheese mixture, leaving a ½-inch border around the edge. Roll up two opposing sides of the dough but leave the center open, creating a boat-like shape. Twist the ends. Top the center with the remaining cheese.
- Transfer to a baking sheet.
- Bake for 20 minutes. Sprinkle the top with fresh parsley, then add the egg yolk to the middle and a slice of butter. Mix the yolk and butter with the cheese.
- Enjoy immediately by tearing off a piece of the bread and dipping it into the cheesy mixture.
Storing:
Georgian cheese bread is best consumed fresh. I recommend storing a ready cooked cheese bread in a Ziplock bag or airtight container in the fridge for up to 4 days. When ready to eat, reheat in the oven at 350F for about 8-10 minutes, until the crust is warm and the cheesy is bubbling. Keep in mind the egg yolk will be fully cooked at this point, so I would recommend removing the old egg yolk and adding a new one towards the last 3-4 minutes of baking.
