Let's talk about chuck roast burnt ends, a dish that is fairly easy to make and I don't think gets enough attention! Traditional burnt ends are made from brisket and the process is as follows; the brisket gets smoked low and slow, then cut into cubes, and finally tossed in BBQ sauce and smoked again until caramelized. They are super tender inside and crispy on the outside, making them really crave worthy! In this version, we used affordable chuck roast and make them in the oven so they are accessible to everyone. You'll still get the juicy interior and crunchy exterior!

Here's what you need:
- 2 lb Chuck roast (I used a flat chuck roast, not trussed. See the image above for reference)
- Mustard- for flavor and to adhere the spice mixture
- Spices: kosher salt, black pepper, paprika, garlic powder and onion powder
- Brown sugar
- BBQ sauce- store bought or homemade
How to make chuck roast burnt ends:
- Preheat the oven to 275F. Start by rubbing the mustard all over the chuck roast.
- Combine the spice rub ingredients and rub it over both sides of the roast. Place it in a baking pan and cover with foil.
- Bake for 2.5-3 hours, until the roast is super soft.
- Remove it from the oven and let it cool slightly.
- Raise the oven temperature to 425F.
- Cut the roast into cubes and sprinkle with brown sugar. Pour the BBQ sauce over everything, and toss well to coat.
- Bake the cubed meat for 15-25 minutes, until it's caramelized.
Variations and substitutions:
If you do have a smoker, smoke at 250F, until the chuck roast hits an internal temperature of 165F.
To add a smokey flavor without the smoker, feel free to add 1 teaspoon liquid smoke to the BBQ sauce.
You can definitely substitute the chuck roast for a brisket instead. I would recommend a well marbled second cut.
Storing and reheating:
Store ready cooked burnt ends in an airtight container in the fridge for 2-3 days or in the freezer for 2-3 months. If you have any juices leftover, store them with the juices to keep them moist.
To reheat, place in the oven at 275F with a splash of BBQ sauce or apple juice. Cover tightly with aluminum foil and bake until warmed through.
