If it was up to me, every salad I ever made would have something meat in it like grilled chicken, turkey, steak...it all just makes every salad better in my opinion! Pasta salad is no exception and I just love the combo of delicious foods in this awesome loaded deli style pasta salad. It's great for a dinner side and especially a BBQ! Let's dig in!!
Ingredients:
- Pasta- cooked according to package directions.
- Roasted chickpeas- Feel free to make your own with the included directions, or buy them ready made. This brand is my favorite!
- Salami
- Pickled red onions
- Olives
- Pickles
- Fresh parsley and dill
- Creamy dressing
How to make the awesome deli style loaded pasta salad
If your making the roasted chickpeas, let's start with that. Preheat oven to 425F. Line a baking sheet with parchment paper. Drain and rinse chickpeas and dry them with kitchen towel. Transfer to the baking sheet and toss with the oil and salt. Roast for 20-25 minutes. While that's roasting, cook the pasta according to package directions.
Cut up the remaining ingredients and transfer to a large bowl. Whisk together the dressing. To serve, combine the strained and cooled pasta with the ingredients in the bowl. Toss with the dressing and top with roasted chickpeas.
Storing
The components can all be prepped in advance and stored separately. Combine the cooked pasta with the olives, pickles, salami, parsley/dill, and pickled red onions. Toss with the prepared dressing and top with roasted chickpeas just before serving.

- 1 lb pasta shape of your choice cooked according to package directions
