    There's always room on the table for a good salad. This fantastic strawberry salad with feta and pecans hits all the right notes. It's sweet and savory, crunchy and creamy. It's the perfect refreshing side for a lunch or dinner, especially as the weather warms up. Now is the time to enjoy juicy strawberries and perfectly ripe mango. Although most of us can access these fruits year round, I want you to take notice at how especially flavorful they are when they are in season. *Chefs kiss*

    Ingredients for fantastic strawberry salad with feta and pecans.

    Ingredients:

    • Lettuce- I like to use a spring mix or chopped Romaine. Spinach works well too if you prefer that.
    • Strawberries - Use fresh ripe strawberries for the best results.
    • Mango- Mango cubes add a delicious tropical flavor to the salad.
    • Candied pecans- OK. These are totally addictive.
    • Feta cheese- You can buy the block or ready crumbled for convenience. I prefer the block because of the moisture content it gets from hanging around in that salty brine all day.
    • Balsamic vinegar- Always good quality
    • Extra Virgin olive oil - Good tasting olive oil is important for dressings!
    • Sugar- You can substitute for honey if you prefer. Adjust to taste.
    • Salt- I always use kosher salt.

    How to make this fantastic strawberry salad with feta and pecans

    First, whisk together your dressing of balsamic vinegar, oil, sugar and salt. Set the dressing aside while you assemble the salad. Place the lettuce of your choice in a large bowl. Add in strawberries, mango, candied pecans and crumbled feta cheese. When ready to serve, pour the dressing over the salad and toss well.
