In the season of trying to feed my kids more wholesome meals, I'm discovering what veggies they actually like and which ones they like idea of, but don't actually eat. Moms, do you know what I mean? Two of my kids are huge cucumber fans and my oldest loves avocados. I was looking for a good refreshing side salad this week and I opened my crisper drawers to well, cucumbers and avocados. This gave me the idea of making the most refreshing cucumber and avocado salad. In keeping with the green theme, I added scallions, cilantro, and lime. SO. GOOD. Meet your new go-to side salad!
Ingredients
- Cucumbers- I always prefer using Persian cucumbers, they are my favorite! You can use any variety you like
- Avocados
- Cilantro
- Scallions
- Fresh lime juice- Please use an actual lime and not bottled for this recipe!
- Salt, pepper, and olive oil (bonus points if the black pepper is freshly cracked)
How to make the most refreshing cucumber and avocado salad
Start by thinly slicing the cucumbers. I like to use a mandoline for this. Add in the diced avocadoes, sliced scallions, and chopped cilantro. Dress the salad with olive oil, fresh lime juice, salt and pepper. Mix well and adjust seasoning as desired. Enjoy immediately.
Storing:
If making the salad a few hours ahead, combine all ingredients into a bowl (except the salt!). Squeeze lime juice directly over avocados and toss gently to combine. Cover the bowl tightly with plastic wrap, placing it directly over the surface of the salad to keep the air out. Oxygen is what causes avocados to brown. Add salt to the salad just before serving and toss well to combine.
