As summer fades into back to school we're all looking to set ourselves up for success. These wholesome apple oat muffins are made with tender apples, hearty oats, and warm cinnamon for the perfect cozy bite. These moist bakery style muffins are easy to make, naturally satisfying, and ideal for breakfast on the go, lunchboxes or for an after work/school snack.

Here's what you need:
- Oat flour - I decided to use oat flour as a base because it contains more fiber and protein then all-purpose flour.
- Cinnamon- classic apple pairing
- Baking powder
- Baking soda
- Salt
- Applesauce
- Coconut oil (melted)- you can use refined coconut oil if you don't like the coconut flavor. You can also use avocado oil.
- Egg
- Honey
- Water- since we're oat flour which absorbs more water then regular, I'm adding flour to the batter to keep it moist.
- Vanilla extract
- Apple- I prefer to use a red apple in this recipe.
- Turbinado sugar- for garnish (optional) but I highly recomend for aesthetics and a sweet crunch.
How to make these wholesome apple oat muffins:
- Start by preheating the oven to 375F and lining a muffin tin with paper liners.
- In a large bowl, whisk together the oat flour, cinnamon, baking soda, baking powder, and salt.
- In a separate bowl, combine the applesauce, melted coconut oil, egg, honey, water, and vanilla
- Pour the wet ingredients into the dry and mix until just combined. Fold in the chopped apples.
- Fill the muffin cups ¾ of the way. Sprinkle with turbinado sugar, if desired.
- Bake for 18-20 minutes or until an inserted toothpick comes out clean.
- Allow to cool for 5 minutes before removing them to a wire rack.
Storing:
Store these wholesome apple oat muffins in an airtight container lined with a paper towel to trap freshness. Keep them at room temperature for two days, in the fridge for up to a week, or freeze them for three months.
