Finding quick to prepare meals, that can give me the energy I need, without compromising on taste, has been number one on my list as we head into the new school year. My favorite 5 minute scrambled egg tacos have be come my go-to. The lightly toasted tortillas are filled with creamy avocado, scrambled eggs, salty feta, and a kick of hot sauce. When I have fresh cilantro on hand, I throw that in as well for a an extra flavor boost.
What ingredients do I need?
- Tortillas- flour or corn for GF
- Eggs
- Feta cheese
- Avocado
- Hot sauce
- Cilantro
How to assemble my favorite 5 minute scrambled egg tacos
Start by toasting the tortillas over a gas flame for a few seconds on each side until lightly charred in spots. Next, add the eggs to a bowl and mix. Add a pinch if salt to the eggs and scramble in a heated non-stick or lightly greased pan. Divide the eggs between the two toasted tacos. Top with feta cheese, avocado, hot sauce and cilantro.
Enjoy immediately.
Substitutes and variations:
Tortillas- Feel free to use any kind of tortillas that you like.
Feta cheese- You can mix it up and add a little shredded cheese while your scrambling the eggs and skip the feta cheese.
Hot sauce- This can be subbed for sriracha or chili crisp.
Cilantro- Use parsley for a more mild flavor.
For a kids version, I like to top a toasted tortillas with cheesy scrambled eggs and mashed avocado.
