    Acai popsicles with a cheesecake swirl

    If you thought acai was just having a moment, think again! It's pretty crazy how it's become part of the norm for my kids to ask for acai bowls. I had no clue what an acai berry was until I was in my mid 20's!! I'm absolutely obsessed with these acai popsicles with a cheesecake swirl. They make a super refreshing dessert, that's totally fancy enough to serve on chag or for an afternoon treat. The acai pops are made with a creamy fruity acai mixture, a silky smooth cheesecake filling and buttery graham crumbs.

    Here's what you need:

    Crumbs:

    • Graham crackers- can be subbed with gluten free grahams 1:1
    • Butter- this will give the crumbs it's decadent flavor while also binding them to form coarse crumbs.

    Cheesecake swirl:

    • Cream cheese
    • Greek yogurt
    • Sugar
    • Vanilla extract

    Acai:

    • Frozen acai packets
    • Frozen mixed berries- I like to use a mix or strawberries and blueberries
    • Honey or maple syrup
    • Lemon juice- fresh only please!
    • Water- to blend the mixture together so it's smooth and pourable. You want the consistency to be slightly less thick then you would make it for an acai bowl.

    How to make acai popsicles with a cheesecake swirl:

    1. Start by preparing all the components. Crush the graham crackers in a food processor into small pieces. Mix in the melted butter until it comes together like wet sand. Set the crumbs aside.
    2. In a medium sized bowl, combine the cream cheese, yogurt, sugar and vanilla extract. Whisk by hand or with a hand mixer until you have a smooth and creamy consistency.
    3. Run the acai packets under warm water. Cut off the top of the packet and squeeze them into a high speed blender. Add in the strawberries, honey, lemon juice and water. Blend until everything is super smooth.
    4. Start filling the ice pop molds. Place two small dollops of cheesecake filling into each mold. Spread a heaping spoon of acai mixture over them.
    5. Using a skewer or toothpick, gently swirl the cheesecake filling. (You can skip this step if you don't care so much about the aesthetic of the front of the pop. It'll still be delicious!)
    6. Add the sticks in and top with a little more acai mixture to even them out.
    7. Sprinkle the crumbs over the pops.
    8. Transfer to the freezer on a baking sheet and freeze until solid, at least 4 hours for these 36 ml ice pop molds.
    9. Pop out of the molds and enjoy!

    Storing:

    I would recommend storing the popsicles in the freezer for up to 1 month for optimal taste.

    Can I make these dairy free?

    Definitely! Sub the butter for coconut oil and the cream cheese and yogurt for dairy free options.

    • scant 1 c frozen berries
    • 1 tablespoon lemon juice
    • 3 tablespoon honey or maple syrup
    • ¼-1/2 c water start with ¼ and add up to ½ - until the mixture blends smoothly.

    Equipment

    • Popsicle molds

    Method
