I'm sure by now you've probably enjoyed your fair share of fresh summer fruits. I love having them on hand for quick snacks, or as a sweet finish to a summer Shabbos meal. But sometimes you need a little something extra, or maybe you have a handful of fruits that are a little past their prime. That's where roasted fruit: the ultimate beautiful summer dessert comes in. It elevates those imperfect fruits into a delicious and beautiful treat.

Ingredients:
- Blueberries
- Strawberries
- Peaches or nectraines
- Apricots
- Coconut sugar
- Vanilla extract
- Cinnamon
- Lemon juice
- Lemon zest
- Serving suggestions: Ice cream, chopped pistachios and fresh mint
How to make roasted fruit: the ultimate beautiful summer dessert
- Preheat oven to 400F. .
- In a bowl, combine coconut sugar with lemon juice + zest, vanilla, and cinnamon.
- Spread the fruit on a sheet pan, brush with the sugar mixture and slide into the oven. Roast for about 20 minutes, or until the fruit is bubbling.
- Remove the roasted fruit from the oven, let cool slightly, and transfer to a serving dish. Serve with ice cream, chopped pistachios and mint if desired. Enjoy!
Storing and Reheating:
Store roasted fruit in an airtight container in the refrigerator for up to 5 days.
To rewarm, reheat in a preheated oven at 350F for 5-10 minutes or until warmed through. You can also microwave for 10-15 second increments stirring in between each interval.

Can I use any other fruits?
Please feel free to add plums if they are in season! I shot this early June so I didn't have access to plums just yet.
What other seasonings can I use?
You can sub the lemon juice and zest for orange. You can also add in a pinch of nutmeg and or cardamon.
