The air has quite literally turned crisp overnight. They like to say it's pumpkin season, but I'm fighting for it to be renamed apple pie season. Do you prefer pumpkin spice or apple pie spice? I decided to give a fun fall spin on the classic muddy buddies with these apple pie spiced muddy buddies, especially in time for Sukkos. Perfect for those cozy Yom Tov nights and days in the Sukkah when everyone is shmoozing and spending time together.

What you need:
- Chex cereal- Rice Chex are the top choice for muddy buddies. It has a light crunch and a neutral flavor, a perfect canvas for the chocolate, peanut butter, and apple pie spice.
- White chocolate chips
- Peanut butter
- Apple pie spice- you can make your own (recipe included below) or buy a ready made mix.
How to make apple pie spiced muddy buddies:
- Start by measuring out the cereal in a large bowl, and set it aside.
- Mix the powdered sugar with the apple pie spice and set aside.
- In a microwave safe bowl, or metal bowl set over a pot of water (double boiler), melt the white chocolate chips and peanut butter. Microwave on High for 1 minute, then stir. Microwave for another 30 seconds if needed until the mixture is completely smooth. Stir in the vanilla extract.
- Pour it over the cereal and toss to coat it completely.
- Transfer the coated cereal into a large 2-gallon resealable plastic bag. Pour in the powdered sugar, seal the bag tightly (leaving some air inside), and shake gently until the cereal is completely covered in a white sugar coating.
- Spread the muddy buddies out on a piece of waxed paper or parchment paper to let them cool completely.
Storing:
Counter: Keep them in a sealed container or zip-top bag on the counter for 1 to 2 weeks. Make sure they are fully cooled and hardened before sealing so they do not get soggy.
Refrigerator: Store them in an airtight container for 2 to 3 weeks. The fridge is especially helpful during warm months to prevent the chocolate coating from melting.
Freezer: Place them in a freezer-safe bag or container to freeze for 2 to 3 months. (many people enjoy eating them directly from the freezer!)
Substitutes and variations for apple pie spiced muddy buddies:
Nut butters: you can definitely substitute the peanut butter for sunflower butter for allergy purposes.
Spices: If you do in fact like pumpkin pie spice better (no judgment there) you can definitely substitute the apple pie for that. Same amounts.
