    Quick crispy rice cake and chocolate bars

    I'm all for adding more wholesome snacks to my home, but the less time they take to make, the more likely I am to make them again! These quick crispy rice cake and chocolate bars combine some of my favorite snack ingredients- rice cakes, peanut butter (or any nut butter) and chocolate! I can't wait for you to try them!

    Ingredients:

    • Salted rice cakes
    • Peanut butter
    • Honey
    • Dark chocolate chips
    • coconut oil

    How to make quick crispy rice cake and chocolate bars

    In a bowl add the rice cakes and use your hands to crush them up. Add in the peanut butter, honey and mix until all combined. Pour into a parchment lined loaf pan or 8x8 pan.

    Melt the chocolate with the coconut oil in the microwave or in a double boiler. Spread the melted chocolate over the crunchy base and spread it evenly using a spatula or back of a spoon. Sprinkle flakey salt over the top, if desired.

    Place the bars in the freezer for 20-30 minutes to set.

    To serve, lift the whole piece out using the edge of the parchment paper. Cut into squares if you used an 8x8 pan or into bars if you used a loaf pan.

    Storing

    Store the ready made bars in the freezer.

    Peanut butter: You can easily swap out the peanut butter for your nut butter of choice.

    Honey: Feel free to swap the honey for maple syrup.

    How can I ensure the bars cut neatly?
    1. Make sure the bars are chilled all the way through.
    2. After each cut, wipe the knife with a towel.
    3. Make sure the knife you are using is sharp!

    Ingredients Method

    Ingredients
      

    • 4 regular rice cakes lightly salted
    • ½ c peanut butter
    • ¼ c honey
    • ½ c dark chocolate chips
    • 1 teaspoon coconut oil
    • maldon salt for garnish

    Method
     

    1. Crumble the rice cakes into a bowl. Add in the honey and nut butter and mix well.
    2. Press the mixture in to either parchment lined 8x8 pan for squares or a parchment lined loaf pan for bars.
    3. Melt the chocolate chips and coconut oil in the microwave or using the double boiler method.
    4. Pour the melted chocolate over the crunchy layer and sprinkle with salt. Freeze for 20-30 minutes.
    5. Cut with a sharp knife and enjoy!
