If you're on team banana bread, (err cake) you are going to love these banana bread waffles with chocolate chips! We're huge fans of bananas in my house. I love to use them for smoothies daily and bake banana muffins or bread on the weekends. This fun breakfast twist on a classic makes the perfect weekend treat, especially for mothers day!
What ingredients do I need for banana bread waffles with chocolate chips?
- All- purpose flour
- Light brown sugar
- Baking powder
- Cinnamon
- Baking soda
- Salt
- Eggs
- Whole milk (with lemon juice) or Buttermilk- I always prefer whole, but you can use any variety, even non-dairy!
- Lemon juice- skip if your using buttermilk.
- Vanilla extract
- Bananas- overripe bananas are key! You want them to be pretty brown.
- Butter- or vegan butter
- Chocolate chips
How to make them:
Pour the milk into a glass and add the lemon juice. Let it sit for 5 minutes to make a "buttermilk" You can skip this step if you have buttermilk on hand. Whisk together the flour, brown sugar, baking powder, cinnamon, baking soda, and salt in a bowl. In a separate bowl, whisk the buttermilk, and vanilla. Add in the mashed bananas and mix again. Next, pour in the dry ingredients and fold with a spatula until just incorporated. Stir in the melted butter and chocolate chips.
Pour ⅓ c waffle batter in a heated waffle iron until golden and crisp, approximately 5 minutes. Serve warm with butter and maple syrup.
If your making a lot of waffles preheat your oven ahead on time on a low temperature and place the finished waffles on a baking sheet to keep warm.
Why bother using buttermilk?
I prefer to use buttermilk in my waffle recipes. When buttermilk mixes with baking soda in a waffle, it reacts and helps make them nice and fluffy. Since it's not an ingredient I usually buy, I often just make it myself using lemon juice and regular milk.
Recipe Tips:
- Banana ripeness: The riper the bananas, the better overall taste. Overripe bananas are sweeter and mash more easily, enhancing the sweetness and flavor of your waffles.
- Preheat the waffle iron: Make sure the iron is properly preheated before adding the batter so ensure even cooking.
- Avoid overmixing: Stir the waffle batter until just combined. Overmixed waffle matter can lead to tougher waffles.
Storing and Freezing Banana Bread Waffles with Chocolate Chips:
To store, let the cooked banana bread waffles with chocolate chips cool. Store in an airtight container in the fridge for a few days. Reheat in a toaster oven for best results.
To freeze, cool the cooked waffles completely. Next, layer the waffles with parchment paper in between each waffle to prevent sticking. Wrap the stack in plastic wrap or aluminum foil and place in a freezer safe bag or container. Use within 3 months. Reheat in a toaster or oven.
