Banana Bread Waffles with Chocolate Chips

These banana bread waffles with chocolate chips are the ultimate breakfast treat! Fluffy waffles are infused with the sweetness of ripe bananas and the richness of dark chocolate chips.

Ingredients
  

  • 1 ¼ cup all-purpose flour
  • ¼ cup light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup whole milk (or milk of your choice) or buttermilk
  • ½ tablespoon fresh lemon juice SKIP if using buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup mashed bananas 2-3 bananas
  • 4 tablespoon unsalted butter or vegan alternative melted and cooled
  • ½ c dark chocolate chips
  • Maple syrup and butter for serving

Method
 

  1. Pour the milk into a glass and add the lemon juice. Let it sit for 5 minutes to make a "buttermilk" You can skip this step if you have buttermilk on hand. Whisk together the flour, brown sugar, baking powder, cinnamon, baking soda, and salt in a bowl.
  2. In a separate bowl, whisk the buttermilk, and vanilla. Add in the mashed bananas and mix again. Next, pour in the dry ingredients and fold with a spatula until just incorporated. Stir in the melted butter and chocolate chips.
  3. Pour ⅓ c waffle batter in a heated waffle iron until golden and crisp, approximately 5 minutes. Serve warm with butter and maple syrup.
  4. If your making a lot of waffles preheat your oven ahead on time on a low temperature and place the finished waffles on a baking sheet to keep warm.
