Method
- Start by toasting the tortillas over a gas flame for a few seconds on each side until lightly charred in spots.
- Next, add the eggs to a bowl and mix. Add a pinch if salt to the eggs and scramble in a heated non-stick or lightly greased pan.
- Divide the eggs between the two toasted tacos. Top with feta cheese, avocado, hot sauce and cilantro. Enjoy immediately.
