Method
- If your making the roasted chickpeas, let's start with that. Preheat oven to 425F. Line a baking sheet with parchment paper. Drain and rinse chickpeas and dry them with kitchen towel. Transfer to the baking sheet and toss with the oil and salt. Roast for 20-25 minutes. While that's roasting, cook the pasta according to package directions.
- Cut up the remaining ingredients and transfer to a large bowl. Whisk together the dressing. To serve, combine the strained and cooled pasta with the ingredients in the bowl. Toss with the dressing and top with roasted chickpeas.
