Awesome loaded deli style pasta salad

The pasta salad that has it all! Loaded with salami, pickled red onions, crunchy chickpeas and more, it makes an amazing side dish or lunch.

Ingredients
  

Salad
  • 1 15 oz can chickpeas or ready roasted chickpeas
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • 1 lb pasta shape of your choice cooked according to package directions
  • ¼ c pickled red onions
  • ½ c sliced black olives
  • ½ c diced dill pickles
  • 6 oz salami cubed
  • 3 tablespoon chopped fresh dill
  • 3 tablespoon chopped fresh parsley
Dressing
  • 1 ⅓ cups mayonnaise
  • 2 tablespoon dijon mustard
  • 2 cloves crushed garlic
  • 2 tablespoon pickle juice

Method
 

  1. If your making the roasted chickpeas, let's start with that. Preheat oven to 425F. Line a baking sheet with parchment paper. Drain and rinse chickpeas and dry them with kitchen towel. Transfer to the baking sheet and toss with the oil and salt. Roast for 20-25 minutes. While that's roasting, cook the pasta according to package directions.
  2. Cut up the remaining ingredients and transfer to a large bowl. Whisk together the dressing. To serve, combine the strained and cooled pasta with the ingredients in the bowl. Toss with the dressing and top with roasted chickpeas.
