4 ingredient broccoli kugel took a quick hiatus from my website as I worked on refreshing my old content. It was amazing to see how many of you went looking for it and messaged me! It's really super simple but a huge family favorite, right up there with my overnight potato kugel. I hope you love it as much as we do, and it finds a home as a staple on your Shabbos and Yom Tov menus.

Ingredients:
- Frozen broccoli florets
- Mayonnaise- I always buy the light but regular is great too!
- Eggs
- Salt and pepper
How to make 4 ingredient broccoli kugel
- Start by boiling water and cooking the frozen broccoli for 3 minutes. This helps blend the florets and keep the broccoli a nice bright green color.
- Drain and pulse the broccoli in a food processor fitted with a "S" blade. Blend for a few seconds until it reaches a chunky consistency.
- Transfer the broccoli to a large bowl. Add the mayo, eggs, and seasonings.
- Pour into a greased 9" round pan and bake for 1 hour.
Storing and reheating:
Broccoli kugel can be stored in the fridge for 4-5 days. To freeze, wrap well and freeze for up to two months. When ready to eat, reheat in the oven for 30-40 minutes until warmed through.
Tips and tricks for 4 ingredient broccoli kugel
- You can thaw the broccoli at room temperature and then blend instead of cooking in hot water.
- I highly recommend baking this in an oven to table dish for ease and even cooking.
- The kugel can be served hot or at room temperature, both are delicious!
- If your short on time, a bag of broccoli cuts can work in a pinch. I prefer the florets because I find the cuts to have a large amount of stalks and less of the crowns.
