    4 ingredient broccoli kugel

Published: Jun 4, 2025 · Modified: Oct 21, 2025 by tomatoestomahtos · This post may contain affiliate links ·

4 ingredient broccoli kugel took a quick hiatus from my website as I worked on refreshing my old content. It was amazing to see how many of you went looking for it and messaged me! It's really super simple but a huge family favorite, right up there with my overnight potato kugel. I hope you love it as much as we do, and it finds a home as a staple on your Shabbos and Yom Tov menus.

ingredients for 4 ingredient broccoli kugel

    Ingredients:

    • Frozen broccoli florets
    • Mayonnaise- I always buy the light but regular is great too!
    • Eggs
    • Salt and pepper

How to make 4 ingredient broccoli kugel

    1. Start by boiling water and cooking the frozen broccoli for 3 minutes. This helps blend the florets and keep the broccoli a nice bright green color.
    2. Drain and pulse the broccoli in a food processor fitted with a "S" blade. Blend for a few seconds until it reaches a chunky consistency.
    3. Transfer the broccoli to a large bowl. Add the mayo, eggs, and seasonings.
    4. Pour into a greased 9" round pan and bake for 1 hour.

    Storing and reheating:

Broccoli kugel can be stored in the fridge for 4-5 days. To freeze, wrap well and freeze for up to two months. When ready to eat, reheat in the oven for 30-40 minutes until warmed through.

Tips and tricks for 4 ingredient broccoli kugel

    1. You can thaw the broccoli at room temperature and then blend instead of cooking in hot water.
    2. I highly recommend baking this in an oven to table dish for ease and even cooking.
    3. The kugel can be served hot or at room temperature, both are delicious!
    4. If your short on time, a bag of broccoli cuts can work in a pinch. I prefer the florets because I find the cuts to have a large amount of stalks and less of the crowns.
