4 ingredient broccoli kugel

this light and delicious 4 ingredient broccoli kugel is a family favorite that is part of our weekly Shabbos meal rotation!

Ingredients
  

  • 1 24 oz bag of broccoli florets
  • 3 eggs
  • ¾ cup light mayonnaise
  • 1 ½ teaspoon salt
  • ¼ tsp ground black pepper

Method
 

  1. Preheat oven to 375F
  2. Start by boiling water and cooking the broccoli for 3 minutes. This helps blend the florets and keep the broccoli a nice bright green color.
  3. Drain and pulse the broccoli in a food processor fitted with a "S" blade. Blend for a few seconds until it reaches a chunky consistency.
  4. Transfer the broccoli to a large bowl. Add the mayo, eggs, and seasonings.
  5. Pour into a greased 9" round pan and bake for 1 hour.
