The mornings have gotten that October chill, making one pot apple pie oatmeal top on my breakfast rotation list. It's filling, comforting, and takes 10 minutes to make- thanks to the quick oats. It definitely helps get me out of bed when it's still dark outside!

Here's what you need:
- Butter
- Apple- of your choice! Here I used red, but I'll often change it up for a tart Granny Smith.
- Cinnamon
- Maple syrup
- Whole milk
- Water- I found that the balance of half whole milk, half water, works very well for me. If you're using reduced fat, or low-fat milk, you might want to skip the water and use exclusively milk.
- Vanilla extract
- Almond butter, for serving. (optional)
How to make one pot apple pie oatmeal:
- Start by melting the butter. Add in the chopped apples, part of the cinnamon and maple syrup. Cook for 5-7 minutes. Remove ⅓ of the apple mixture for the oatmeal topping.
- Pour in the water, milk, vanilla extract, and the remaining cinnamon and maple syrup.
- Cook until the mixture boils. Pour in the quick-cooking oats. Stir for 3-4 minutes until it's cooked through.
- Divide the oatmeal up between bowls and top with the reserved apples.
- Drizzle with almond butter, if desired.
Storing and reheating:
This is the best served fresh but you can totally store and reheat if needed.
Reheating:
Microwave (Fastest)
- Scoop your cold oatmeal into a microwave-safe bowl.
- Splash your liquid (water or milk) directly over the top.
- Do not stir yet. Cover the bowl with a microwave-safe plate or damp paper towel to trap the steam.
- Microwave on high for 1 minute, then remove and stir vigorously to break up the lumps and incorporate the liquid.
- If it still looks too thick, add one more splash of liquid, stir, and microwave for another 30 to 45 seconds until hot and creamy
Stovetop (Best texture):
- Place the cold oatmeal into a small saucepan.
- Add your liquid and place the pan over low heat.
- Cover tightly with a lid for 3 to 5 minutes to let the steam trap and soften the oats.
- Remove the lid, stir gently to blend the liquid into the oats, and let it simmer for another minute until heated all the way through.
