One pot apple pie oatmeal

warm, cozy, and packed with fall flavor, this one pot apple pie oatmeal combines tender apples, cinnamon, and hearty oats in a creamy breakfast that tastes just like a slice of homemade pie. Made in one pot for east cleanup, it's the perfect comforting way to start the day.

Ingredients
  

Apples
  • 1 tablespoon butter or coconut oil
  • 1 medium apple diced
  • 2 tablespoon maple syrup
  • ½ teaspoon cinnamon
Oatmeal
  • 1 cup water
  • 1 cup whole milk
  • 2 teaspoon maple syrup
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup quick cooking oats
  • almond butter for drizzling optional

Method
 

  1. Start by melting the butter. Add in the chopped apples, part of the cinnamon and maple syrup. Cook for 5-7 minutes. Remove ⅓ of the apple mixture for the oatmeal topping.
  2. Pour in the water, milk, vanilla extract, and the remaining cinnamon and maple syrup.
  3. Cook until the mixture boils. Pour in the quick-cooking oats. Stir for 3-4 minutes until it's cooked through.
  4. Divide the oatmeal up between bowls and top with the reserved apples.
  5. Drizzle with almond butter, if desired.
