The warm weather has been here for a while now, and maybe your grill favorites are getting a little stale? It's time to change it up with this Peruvian chicken and green sauce! Juicy chicken thighs are marinated in lime juice, soy sauce, garlic and spices. It's traditionally served with a green sauce made with cilantro and jalapenos that is so vibrant, spicy and delicious!! Common, let's go try something new and loaded with flavor...

Here's what you need to make Peruvian chicken and green sauce:
for the chicken:
- dark chicken thighs- this recipe is actually usually made with bone in chicken, but I personally prefer boneless and skinless thighs. You can totally adjust and make it with bone in, just extend the cooking time.
- Soy sauce
- Minced fresh garlic or frozen cubes
- Lime juice
- Olive oil
- Spices: cumin, paprika. dried oregano and black pepper
for the green sauce
- Cilantro- is most traditional. If you are not a fan, I'd recommend using parsley instead.
- Jalapenos
- Garlic
- Mayo
- Lime juice
- Vinegar
- Olive oil
- Salt
How to make it:
- Start by whisking together all the marinade ingredients including the soy sauce, garlic, lime juice, paprika, cumin, oregano and black pepper. Add in the chicken and toss to coat in the marinade.
- Heat the grill to medium high heat. Once the grill is heated, add the chicken pieces and cook for 6-8 minutes per side.
- While the chicken is grilling, combine the cilantro, jalapeno, garlic, mayo, lime juice and vinegar in a blender. Slowly pour in the olive oil.
- Once the chicken is cooked through, remove it from the grill and serve with the green sauce. Either drizzle it over the chicken, or serve it on the side as a dipping sauce.
Storing and reheating Peruvian chicken and green sauce:
Store leftover cooked Peruvian chicken and green sauce in separate airtight containers for 3-4 days. To reheat, place the chicken in an oven at 350F, until warmed through.
