Peruvian chicken and green sauce

This Peruvian chicken and green sauce is marinated in garlic, soy, and warm spices, then grilled for that juicy and charred flavor. It's served with the classic creamy green sauce made from cilantro, jalapeno and lime. It brings heat, tang and freshness to every bite!

Ingredients
  

Chicken
  • 4 boneless and skinless chicken thighs
  • 3 cloves garlic minced or frozen cubes
  • c soy sauce
  • 2 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • freshly ground black pepper
Green sauce
  • 1 cup cilantro leaves
  • 2 jalapenos (remove seeds for less heat)
  • 3 cloves garlic fresh or frozen cubes
  • ½ c mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 teaspoon white vinegar
  • 2 Tbso olive oil
  • ½ teaspoon salt

  • Grill or grill pan

Method
 

  1. Start by whisking together all the marinade ingredients including the soy sauce, garlic, lime juice, paprika, cumin, oregano and black pepper. Add in the chicken and toss to coat in the marinade.
  2. Heat the grill to medium high heat. Once the grill is heated, add the chicken pieces and cook for 6-8 minutes per side.
  3. While the chicken is grilling, combine the cilantro, jalapeno, garlic, mayo, lime juice and vinegar in a blender. Slowly pour in the olive oil.
  4. Once the chicken is cooked through, remove it from the grill and serve with the green sauce. Either drizzle it over the chicken, or serve it on the side as a dipping sauce.
