If you know my recipes well, you'll realize this is an oldie but goodie! I've made this one pan sausage and rice so many times over and over, and adjusted it slightly along the way. I wanted to refresh it and give it new life, because it really is amazing and so easy to make. You know I love a good easy dinner.

What you need to make one pan sausage and rice:
- olive oil
- Italian sausages- these are by far my favorite variety of sausages, but you can feel free to substitute it with yours.- or even hot dogs!
- Onion
- Garlic- 9/10 times I'm using the frozen minced cubes because they are amazing.
- Red pepper- You can use any color here, but if we want some color variety, go for the red.
- long grain rice- Basmati is my go to but any long grain variety will work well here.
- Chicken broth- vegetable broth is a great substitute.
- Spices- salt, pepper, and smoked or regular paprika
- Frozen peas
How to make it:
- In a pot with a heavy base, heat 2 tablespoon of oil over medium-high heat. Add sausages and cook for 5-7 minutes until lightly browned. Remove with a slotted spoon and set aside.
- Add the remaining tablespoon of oil to the pot. Add in the garlic and onions and cook for 2 minutes. Add in red pepper and cook 2 minutes more. Add rice, broth, paprika. salt, black pepper and the seared sausages to the pan. Stir, bring to a boil, then lower the flame to a simmer and cook covered for 20 minutes.
- Remove the pan from the stove, add the peas and cover again. Let it sit for 10 minutes, the residual heat will cook the peas. Fluff and serve!
Storing and reheating one pan sausage and rice:
Store in the refrigerator for 3-4 days.
For longer storage, place the cooled mixture in a freezer-safe bag or container and store it in the freezer for up to 3 months. Thaw frozen portions in the refrigerator overnight before reheating.
