    Baked black bean tacos

    I'll have to admit, I really prefer meat or chicken for dinner over fish or dairy. However, I try to incorporate at least one dairy or vegetarian meal a week, just for balance. I was doom scrolling on Instagram when baked black bean tacos popped up on my feed. You know what? They actually looked bomb. I couldn't wait to recipe test my idea and I immediately ordered what I needed from Target. Gd bless my Shipt account! I got the recipe nailed to perfection, and I cannot wait for you to enjoy them! We're having them again for dinner tonight and my kids are having quick homemade stuffed crust pizza!

    Ingredients needed for baked black bean tacos:

    • Onion, red pepper, green pepper- sauteed to add a delicious savory base for the tacos.
    • Taco seasoning- homemade or store bought
    • Black beans- canned black beans are absolutely perfect for this recipe. If you want to, feel free to cook black beans from scratch!
    • Corn- I love adding canned corn. You can also try diced roasted sweet potato or butternut squash in addition or instead.
    • Shredded cheddar or Pepper jack cheese
    • Tortillas- any kind you'd like! I prefer corn.

    How to make them:

    1. Start by preheating the oven to 450F.
    2. In a large skillet or pot, heat the olive oil. Add the diced onion and peppers.
    3. Cook for 3-5 minutes before adding in the taco seasoning.
    4. Mix everything together so the seasoning coats the veggies.
    5. Add the black beans with any liquid from the can to the veggies. Cook for 2-3 minutes and then mash half of the beans with a potato masher.
    6. Pour in the corn and toss well.
    7. Remove the mixture from the stove to cool slightly.
    8. Take the corn tortillas and place them into the oven for 1 minute to warm. This makes them pliable and easier to work with.
    9. Spray a sheet pan with oil. Put a few tortillas onto the sheet pan and toss them to coat both sides in the oil.
    10. Place some of the bean mixture on one side of the taco. Add shredded cheese on top and fold the tortilla in half.
    11. Continue with the rest of the tortillas.
    12. Bake for 8-10 minutes. Remove the pan from the oven and flip the tortillas to the other side. Bake for an additional 8-10 minutes.
    13. Allow the tacos to cool for a few minutes before serving.
