    The easiest magic lemon cobbler

    If your looking for a great last minute dessert, I got you! It's in the name! The easiest magic lemon cobbler comes together so quickly and is bursting with lemon goodness. With the popularity of my fall magical pecan pie cobbler, I knew it was time for delicious dairy springtime magic cobbler. Of course it can be made year round, but there is something so fresh about the paring of lemon and spring!

    ingredients needed for the easiest lemon cobbler

    Ingredients:

    • Butter- unsalted
    • All-purpose flour
    • Sugar
    • Baking powder
    • Salt
    • Milk- I always use whole milk, but you can use any type.
    • Lemon extract
    • Vanilla extract
    • Lemon pie filling- I used something called lemon creme because I had it in my pantry already from a previous photoshoot. Any lemon pie filling will work!
    • Powdered sugar, for serving (optional)

    How to make the easiest magic lemon cobbler:

    1. Start by preheating the oven to 350F. Place the butter in a baking dish and melt it in the oven. (It can take anywhere from 5-10 minutes, depending on how cold the butter is etc.)
    2. While the butter is melting, whisk together the flour, baking powder, and salt. Add the sugar and mix again.
    3. Stir in the milk, vanilla extract, and lemon extract until the mixture is combined.
    4. Pour the cobbler batter over the melted butter in the dish. Do not stir.
    5. Dollop the lemon pie filling around the dish.
    6. Bake for 45-55 minutes, until the cobbler is golden brown.
    7. Let the cobbler set for a few minutes before garnishing with powdered sugar and serving.

    Storing and reheating:

    Refrigerator: Cover and store in the fridge for up to 5 days.

    Freezer: Cover well and freeze for up to 3 months!

    Reheat in a warm oven until heated through.

    What should I serve the easiest magic lemon cobbler with?

    • Fresh berries- serve with some fresh sliced strawberries or blueberries for a special touch.
    • Whipped cream- for a little added creamy sweetness.
    • Vanilla ice cream- a classic dessert pairing that always hits!

    Substitutes:

    Butter: If you want to make this dairy free, feel free to substitute for a dairy alternative like margarine.

    Milk: Any plant based milk will work well here!
