As you know, I work from home and often my lunch is a last minute scramble. Something I like to make often is fried rice because I usually have everything I need on hand down to the cold rice from the night before (we eat sooo much rice!) This one pan rotisserie chicken fried rice combines easy fried rice with a rotisserie chicken from the grocery store for a fabulous weeknight dinner. By the way, I really think rotisserie chickens are truly a hidden gem. It's such a great time saver!
What you need:
- 1 rotisserie chicken
- Leftover white rice- If you don't have leftover rice, scroll down. I've included fresh rice chilling instructions!
- Beef bacon- optional but highly recommended for amazing flavor!
- Eggs
- Onion
- Frozen peas, carrots, and corn
- Sesame oil
- Soy sauce
- Scallions
How to make one pan rotisserie chicken fried rice:
Start by heating a non-stick skillet over medium heat. Add two eggs and scramble. Once the eggs are cooked, remove them from the pan. Add in the sesame oil and diced beef bacon. Cook for 6-8 minutes on medium-low until the beef bacon starts to caramelize. Add in the onions and cook an additional 5 minutes or until golden. Pour in the frozen peas, carrots, and corn. Cook for 2-3 minutes. Add in the cold rice and gently break up any clumps with a fork. Drizzle in the soy sauce and mix it well to coat the rice. Add in the cubed rotisserie chicken and eggs. Transfer to a bowl and top with sliced scallions.
Storing and reheating:
Let the rice cool to room temperature before storing in an airtight container in the fridge.
To reheat, use a skillet on the stovetop over medium heat, stirring frequently to prevent burning, and add a splash of water if needed to regain moisture.
Notes and tips for one pan rotisserie chicken fried rice:
If you don't have leftover rice: Cook fresh rice and spread on a sheet pan. You can pop it into the fridge for a few minutes to speed up the process.
Use a wok or large skillet: This will ensure that the ingredients heat quickly and that there is room to toss everything together.
Prep ahead: Gather all your ingredients and measure them out. The dish comes together very quickly!
