Vibrant middle eastern style cauliflower side dish

Ingredients
  

  • 1 head fresh cauliflower cut into florets
  • 2 tablespoon olive oil
  • 1 lemon zested plus more for garnish (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon za'atar
  • Tahini sauce for drizzling
  • ¼ c pomegranate seeds
  • 2 tablespoon fresh dill chopped
  • 2 tablespoon fresh mint chopped
  • 2 tablespoon shelled pistachios
  • juice of 1 lemon

Method
 

  1. Preheat oven to 450F. Line a baking sheet with parchment paper.
  2. Add the cauliflower to the baking sheet and toss with olive oil, zaatar, lemon zest, salt and pepper. Roast for 30-45 minutes.
  3. Top with tahini sauce, pomegranate seeds, dill, mint, pistachios and fresh lemon juice.
