Start by making the pizza dough. Combine the yeast, sugar, and water in the bowl of a mixer fitted with a dough hook or in a large bowl.
Add in the flour, salt, and olive oil.
Mix well until a smooth dough forms. Sometimes, the dough is a little sticky so add more flour as needed. Start with 1 tablespoon at a time and make sure the flour is fully incorporated before adding more.
The dough should be very smooth and easy to work with.
Spray a bowl with olive oil and add the ball of dough. Spray the top of the dough and cover with a warm wet towel. Place the dough in a warm place, preferably next to the oven.
Place a pizza stone inside the oven and preheat it to 500F.
The dough should rise considerably in the next 30-40 minutes.
Place it on a sheet of parchment paper and gently roll it out into a circle the size of a personal pie.
Slice the cheese sticks in half horizontally and place them at the edge of the pizza with a little but of dough at the end so you can fold the dough over the cheese stick.
Fold the edges of the dough over the cheese stick and press it to stick. The cheese should be fully covered in the dough.
Gently prick the dough with a fork to allow air to flow through the crust while baking.
Spread the sauce over the dough and top with cheese.
Transfer the parchment to the heated pizza stone and bake the pizza for 8-10 minutes.
Cool for 10 minutes before slicing.
