Quick chili oil noodles with a fried egg

Ingredients
  

  • 1 3 oz package of ramen noodles
  • 1 teaspoon olive oil
  • 1 egg
  • ¼ cup chili oil crisp
  • 1 tablespoon soy sauce
  • 2 tablespoon honey
  • ½ tablespoon rice vinegar
  • ½ tablespoon sesame oil
  • ½ tablespoon sesame seeds plus more for garnish, if desired
  • sliced scallions for garnish

Method
 

  1. Cook the noodles according to package directions.
  2. While the noodles are cooking, heat a skillet over medium-low, allowing it to fully pre-heat (3-5 minutes). Add the olive oil (or fat of choice) and swirl to coat the surface of the skillet. Crack the egg into the frying pan and cook until the whites are set and the yolk is still liquid (sunny side up). Remove the egg from the pan and place onto a plate.
  3. To the same skillet, add the chili crisp, soy sauce, honey, rice vinegar, and sesame oil. Cook for 1 minute. Add in the sesame seeds and mix well. Add in the strained cooked noodles and toss them in the sauce until they are evenly coated.
  4. Transfer the noodles to a bowl and top with the fried egg and sliced scallions.
