How to make Georgian cheese bread with pizza dough

Ingredients
  

  • 10 oz pizza dough
  • 2 cups shredded mozzarella cheese
  • 1 cup feta cheese
  • ¾ cup ricotta cheese
  • freshly ground black pepper
  • 1 large egg yolk
  • 1 tablespoon butter
  • parsley for garnish

Method
 

  1. Preheat oven to 450°F. In a bowl, combine the three cheeses. Season with a few grinds of pepper.
    On a lightly floured piece of parchment, roll dough into an oval ⅛-inch thin.
  2. Top with three-quarters (3.5 cups) of the cheese mixture, leaving a ½-inch border around the edge. Roll up two opposing sides of the dough but leave the center open, creating a boat-like shape. Twist the ends. Top the center with the remaining cheese. Transfer to a baking sheet.
  3. Bake for 20 minutes. Sprinkle the top with fresh parsley, then add the egg yolk to the middle and a slice of butter. Mix the yolk and butter with the cheese.
    Enjoy immediately by tearing off a piece of the bread and dipping it into the cheesy mixture.
