Cookie sticks with sprinkles

Ingredients
  

  • ½ c oil avocado, canola, or vegetable
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract optional for that bakery style taste
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ c light brown sugar
  • ½ c sugar
  • 1 ½ c all-purpose flour
  • ½ c red, white and blue jimmies sprinkles

Method
 

  1. Preheat the oven to 350F. Line a full sized baking sheet with parchment paper and set aside.
  2. Pour the oil, egg, and extract into a large bowl. Mix by hand to combine.
  3. Add in the salt, baking soda, and sugars. Mix again.
  4. Add in the flour. Once you have a nice cookie dough, your ready for the sprinkles.
  5. Fill ½ c measuring cup with ⅓ of each color sprinkles.
  6. Fold the sprinkles into the dough. (I like to fold in ¾ of them and use the rest to press to the top of the logs just before baking)
  7. Divide the dough into two logs on the prepared baking sheets.
  8. Bake for 16 minutes.
  9. Cool completely before slicing into sticks.
