Ingredients

  • 3 tablespoon olive oil divided
  • 1 lb ground beef
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 1 medium onion
Special sauce
  • ¼ c mayonnaise
  • 2 tablespoon ketchup
  • 1 tablespoon sweet pickle relish
  • ½ teaspoon white or apple cider vinegar
  • 1 ½ teaspoon yellow mustard
  • ½ tsp garlic powder
  • ½ teaspoon sugar
  • salt and pepper to taste
Toppings:
  • iceberg lettuce
  • pickle chips
  • sesame seeds

Equipment

  • ¼ sheet pan

Method

  1. Preheat oven to 400F.
  2. Start by heating up half of the olive oil in a skillet. Add the ground beef and break up the clumps of meat. Add the garlic powder and salt to the beef and cook until browned.
  3. Remove the ground beef from the skillet with a slotted spoon and transfer to a bowl.
  4. Add remaining olive oil if needed and cook the diced onions on medium low for up to 30 minutes or until caramelized to your liking.
  5. While the onions are cooking, line a quarter size baking sheet with parchment paper. Layer the chips onto the baking sheet.
  6. Top with ground beef and dairy free cheese. Bake for 10-15 minutes until the cheese is melted.
  7. While it's baking, prepare the special sauce.
  8. Remove the chips from the oven and top with lettuce, pickle chips, sauteed onions, special sauce, and sesame seeds.
  9. Serve immediately.
