A great fall dessert: apple pie crumble bars

A great fall dessert: apple pie crumble bars. Soft cinnamon apples are tucked in between a shortbread crust and a crumble for the perfect sweet bite.

Ingredients
  

Crust and crumb topping
  • ¼ c sugar
  • ¼ c brown sugar
  • ½ teaspoon baking powder
  • 1 ½ c all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla
  • 1 large egg
  • 1 stick butter or margarine
Apple filling:
  • 3 medium granny smith apples cut into a small dice
  • ¼ c all-purpose flour
  • ¼ c sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg optional
  • ¼ tsp salt

Method
 

  1. Combine the sugars, baking powder, flour and salt in a bowl. Add in the egg and vanilla extract. Add in the butter and crumble everything together with your fingers. Press ¾ of the crumbs topping into the bottom of a 8x8 pan fitted with parchment paper.
  2. Mix the filling ingredients together and pour on top of the crust. Crumble the remaining crumbs on top of the filling.
  3. Bake at 350 F for 45 minutes. Cool completely before slicing.
