Weeknight Meatloaf

The perfect delicious weeknight meatloaf to add to the dinner rotation.

Ingredients
  

Meatloaf:
  • 1- 1.3 lbs ground beef
  • 2 large eggs
  • 1 cup plain bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon parsley flakes
  • ½ teaspoon ground black pepper
  • 2 Tbsp ketchup
  • ½ cup unsweetened almond milk or another non-dairy milk
Topping:
  • ¾ cup ketchup
  • 1 ½ teaspoon apple cider vinegar
  • 1-2 Tbsp brown sugar (depending on how sweet you like it)

Method
 

  1. Preheat oven to 350F. Line a baking sheet with parchment paper and set aside,
  2. Combine the meatloaf ingredients together in a large bowl.
  3. Shape the mixture into a loaf on the baking sheet.
  4. Combine the topping ingredients in a bowl and spread over the meatloaf
  5. Bake for 45 minutes. Raise the oven temperature to 375F and bake for an additional 15 minutes.
