The Best Blueberry Streusel Loaf Cake

This blueberry streusel loaf cake is the perfect coffee cake style loaf to enjoy anytime of the day!

Ingredients
  

Cake:
  • ¾ cup sugar
  • ½ cup milk soy, almond, or regular
  • ½ cup oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 pint fresh blueberries (16 oz)
Streusel topping:
  • ¼ cup sugar
  • 5 tablespoon all-purpose flour
  • 4 tablespoon margarine or butter cut into chunks
  • ¾ teaspoon cinnamon

Method
 

  1. Preheat oven to 350F
  2. In a medium sized bowl, stir together the sugar, milk, oil, egg and vanilla extract and set aside.
  3. In a separate bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients mixture. Mix well.
  4. Gently fold in the blueberries with a spatula.
  5. Pour the batter into a greased 9" loaf pan.
  6. Combine the streusel topping ingredients in a bowl, and use your finger to form crumbs. Sprinkle over the cake.
  7. Bake for 60-65 minutes, until an inserted toothpick comes out clean and the crumbs are golden.
  8. Cool for 15 minutes in the loaf pan before removing the cake and transferring it to a cooling rack.
