Simple veggie rice soup

Warm up with this simple veggie rice soup, perfect for when you don't want to do a lot of chopping or don't have a lot of produce on hand!

Ingredients
  

  • 2 tablespoon olive oil
  • 1 onion diced
  • 2 carrots peeled and cut into thin half circles
  • 3 stalks celery sliced
  • 1 small zucchini diced
  • 1 c short grain brown rice
  • 6-7 c veggie broth or some broth, some water
  • 1 ½ teaspoon salt or to taste

Method
 

  1. Sauté onions, carrots and celery in the olive oil for 5-7 mins.
  2. Add zucchini and cook an additional minute before adding the broth. Bring to a boil.
  3. Add brown rice and cook on low for 45 min-1 hr.
  4. Add additional broth or water as needed.
