Simple honey cake with earl grey tea for Rosh Hashanah

Ingredients
  

  • 1 ¼ c all-purpose flour
  • c sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ c vegetable oil
  • 2 eggs
  • c honey
  • 1 teaspoon vanilla
  • 2 tea bags steeped in ½ c water

Method
 

  1. Preheat oven to 350F. Line a loaf pan with parchment paper and set aside. Steep two tea bags in ½ c water.
  2. In a medium-sized bowl, combine all of the dry ingredients and whisk to blend. In a separate bowl, whisk together the oil, eggs, honey, and vanilla. Add the dry ingredients and mix until just combined. Add the brewed tea and blend.
  3. Pour into the prepared pan and bake for about 45 minutes or until a fork comes out clean.
