In a large bowl or in the bowl of a mixer, combine the oil and sugar until creamy.
Add in the eggs, orange juice, and vanilla extract. Mix well.
Add in the salt and baking powder. Slowly pour in the flour, making sure it's incorporated before adding more.
Once the dough is mixed, remove it from the bowl and onto a floured work surface.
Separate the dough into 3 pieces using a bench scraper or knife.
Wrap each piece in plastic wrap and chill in the fridge for 30 minutes.
Preheat oven to 350F.
Working with one piece at a time, roll into a large oval on a piece of parchment paper. Spread the filling of your choice all over the dough.
Roll up the dough, cinnamon roll style until you've got a nice long log.
Cut the roll ¾ of the way with even 1-inch thick indents. Bake the cookies in the oven for 25-30 minutes.
