Parmesan roasted baby corn

This parmesan roasted baby corn is tossed with spices and lime juice and topped with parmesan cheese for an addictive side dish.

Ingredients
  

  • 3 cans baby corn 15 oz cans
  • 3 tablespoon melted butter
  • juice of ½ lime
  • 1 tsp (heaping) smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • additional lime juice for serving
  • chopped fresh cilantro
  • ¼ c grated parmesan

Method
 

  1. Preheat oven to 425F. Line a baking sheet with parchment paper.
  2. Toss the drained baby corn onto the baking sheet. Drizzle with melted butter, lime juice, and spices.
  3. Toss the corn with your hands really well until each piece is coated.
  4. Roast for 25 minutes, or until the corn is lightly charred.
  5. Garnish with additional lime juice, parmesan and chopped cilantro.
