Start by sprinkling salt and pepper over both sides of the meat. Divide the meat into balls, generally 2 ½- 3 oz for a 6" tortilla will work well.
Take each ball and spread it over the tortilla until the meat reaches the edges. It will shrink while cooking, so try to get right up there for a good meat to taco ratio!
Heat a skillet over medium-low heat. When it's hot, add the taco meat side down and cook for 3 minutes, occasionally smashing it down with a spatula or burger press.
Flip the tortilla and cook for an additional 1 minute, or until the edges are crispy.
Transfer to a pan and set aside. Repeat with the remaining tortillas.
Whisk together the special sauce.
Serve each smashed burger taco with tomato, lettuce, pickles and a drizzle of special sauce.
