How to: Nut brittle

The basic way to make gorgeous nut brittle as a treat or beautiful dessert garnish.

Ingredients
  

  • 1 ½ cups granulated sugar
  • 1 ⅓ cups roughly chopped or whole nuts of your choice raw or roasted and unsalted
  • pinch of salt coarse grind for texture or use salted roasted nuts

Method
 

  1. Place a pot on the stove over medium heat.
  2. Pour in the sugar and let it melt or caramelize. This can take anywhere from a few minutes to 15-20 minutes. Keep a close eye on it, be patient and don't stir!
  3. When the sugar is totally dissolved, dark in color, and begins to lightly bubble evenly, pour in the nuts.
  4. Immediately transfer to a parchment lined baking sheet. Careful! It's super hot. Quickly spread it out into an even layer. Top with coarse salt if desired and let the brittle cool for at least 2 hours.
  5. Break or cut into pieces.
