Preheat the oven to 350 F. Line two baking sheets with parchment paper and set aside. In the bowl of the mixer, cream together the oil and sugars, until smooth. Add in the egg yolk, egg, and vanilla extract. Slowly add in the remaining ingredients and mix until combined. Fold in the chocolate chips.
Scoop the cookies onto the prepared baking sheets. (I used a heaping tbsp for each cookie.) Bake for 12-14 minutes, or until the edges of the cookie start to crisp up and turn golden.
Let the cookies harden on the baking sheet for 3-5 minutes, before transferring them to a cooling rack.
