This week, the unimaginable happened. We hit 65 F smack mid FEBRUARY. I know, I still can’t believe it. I got a little spring fever and took my car to get a good cleaning. I sure was not the only one. As I sat on line waiting my car’s turn, watching the man in front of me run in and out of his car with a bottle of 409 (why though? Your IN the car wash line) I began to crave an icy cold drink.
I inhaled and had a quick flash back to spring. Gosh this weather is EVERYTHING. I love to take my daughter to ice cream when the weather is just starting to get warm, and this air reminded me of just that. A milkshake. It have to have a milkshake!
When I got home, I swung open the pantry and my eyes landed on a lone package of lotus cookies that had been mysteriously uncovered when somebody moved the pretzels. Lotus milkshake. Done.

It’s so simple I could cry. Where had I been all these days? All you need is Lotus goodies, milk, and ice cream. Oh and a little whip if your feeling it. (Let’s be honest, I’m always feeling the whip.)
I know that by the time you’r reading this it’s probably cold again. Because well…February. I could see this going down on a snow day too though. Don’t you?

Lotus Biscoff Milkshake
Ingredients
- 2 cups whole milk
- 3/4 cup lotus biscoff creamy cookie butter divided
- 8 scoop vanilla ice cream
- a few lotus cookies for garnish crushed
Instructions
- Optional: Melt 1/4 c of the cookie butter in the microwave for 30 seconds on high. Drizzle it inside two glasses. Next, combine the remaining 1/2 c cookie butter, ice cream, and milk in a blender. Blend on high for 2 minutes. Pour into the glasses. Garnish with whipped cream and crushed lotus cookies.
So sinfully good. I’m not sure what I did before all this Lotus goodness was available in my local grocery store. Sigh.
