Donuts are arguably the best food on Chanukah. I’m more than happy to celebrate each night with these delectable balls of fried dough with jelly oozing down my fingers, and a puff of powdered sugar on my nose.
Making them is fun, but tedious. I’d prefer to watch you make them and eat them. I was looking for a quick way to get my sugar fix. No waiting involved. Turns out, ricotta cheese does the trick. So much so, you don’t even need yeast!
Feel free to customize your donuts with a squirt of jelly, custard, or caramel inside. Or make them all! You’ll be done making them in about 30 minutes so there’s plenty of time to go ahead and customize everyone’s favorites.
- 1 c ricotta cheese
- 3 eggs
- 1/4 c sugar
- 1/2 tsp vanilla
- 1 1/4 c flour
- Powdered sugar for dusting
- Oil for frying
- Heat the oil in a large pot until it reaches 350 F. Mix the ricotta, eggs, and sugar until smooth. Add in the flour and vanilla. Mix well until combined. When the oil is ready, dip an ice cream scooper into the oil and then scoop out some of the ricotta mixture. Drop the batter into the hot oil and fry until golden brown and cooked through. Transfer to a paper towel lined plate and dust with powdered sugar.
