Beets on the grill? Who woulda thunk? They are actually delicious! The grill imparts a slightly smoky charred flavor. We like to top them with a squeeze of grilled citrus and a pinch of flakey salt.
- 6 red beets
- 3 yellow beets
- 1 lime halved
- 1 orange halved
- 1 tbsp olive oil
- Pinch of flakey salt
- Preheat your grill to the highest setting. Throw the beets on the grill. Cook them for 40 minutes, turning every 10 minutes or so.
- Transfer to a bowl and cover with foil. In the meanwhile, grill the citrus fruits, cut side down for 5 minutes. Transfer to a plate. After 30 minutes, remove the foil from the beets. The skin should slide right off. If needed, peel with a peeler. Slice up the beets and transfer to a plate. Squeeze the orange and the lemon over the beets. Drizzle with olive oil and sprinkle on some flakey salt.
