Grilled Beet Salad

Beets on the grill? Who woulda thunk? They are actually delicious! The grill imparts a slightly smoky charred flavor. We like to top them with a squeeze of grilled citrus and a pinch of flakey salt. 


Grilled Beet Salad


  • 6 red beets
  • 3 yellow beets
  • 1 lime halved
  • 1 orange halved
  • 1 tbsp olive oil
  • Pinch of flakey salt


  1. Preheat your grill to the highest setting. Throw the beets on the grill. Cook them for 40 minutes, turning every 10 minutes or so.
  2. Transfer to a bowl and cover with foil. In the meanwhile, grill the citrus fruits, cut side down for 5 minutes. Transfer to a plate. After 30 minutes, remove the foil from the beets. The skin should slide right off. If needed, peel with a peeler. Slice up the beets and transfer to a plate. Squeeze the orange and the lemon over the beets. Drizzle with olive oil and sprinkle on some flakey salt.
