Toasted marshmallows evoke fond memories for lots of us. When we hear s’mores we think long summer nights, bonfires or bbqs, and family and friend get togethers. For me, it takes me back to when I would sleepover at my neighbor’s house and we would sneak in the kitchen to roast marshmallows over the stoves flame until we would get caught! We’ve upgraded this dessert with a splash of bourbon. ‘Cuz what’s a BBQ without a glass of bourbon?!
Cast Iron Skillet S’mores Bourbon Brownie:
- ½ cup flour
- ⅔ cup unsweetened cocoa powder
- 1 ½ cup sugar
- ½ cup brown sugar
- 1 tsp salt
- ½ tsp baking powder
- ⅔ cup oil
- 3 eggs
- 1 tsp vanilla
- ¼ cup bourbon
- 3 graham crackers cut into pieces
- A handful of marshmallows cut in half (or mini)
Combine dry ingredients in a bowl.
Mix oil, eggs, vanilla and bourbon in a separate bowl.
Add the wet ingredients to the dry.
Whisk together until smooth consistency.
Pour mixture into a cast iron skillet and top with graham cracker pieces
Bake on grill at 300F until edges are set and middle is still fudgy. Approximately 10-12 minutes.
Remove the pan from the grill and top with marshmallows.
Place back on the grill for 1-2 minutes just until, the marshmallows are toasted and gooey.
